Ingredients:
- 2- 1/4 cups Pamela’s Mix
- 1 tps baking powder (non aluminum)
- 1/3 cup palm sugar or other non sugar sweetener (lakanto, maca, yakon, xyltiol)
- 10 to 15 drops liquid stevia (sunnydew, sweetleaf)
- 4 Tbsp organic cultured or raw butter
- 2/3 cup So Delicious coconut milk
- 1 large organic omega 3 egg
- 1/3 cup organic blueberries (fresh or frozen)
- 1/3 cup organic raspberries (fresh or frozen)
- squeeze of lemon juice
- 1/2 tsp lemon zest
Yield: 10 scones. Preheat oven to 350 degrees. Mix all ingredients together. Dough will be thick. Drop Large, tall dollops of dough onto an ungreased baking sheet. Bake for 15-17 minutes.
