Zesty Berry Scones

Ingredients:

  • 2- 1/4 cups Pamela’s Mix
  • 1 tps baking powder (non aluminum)
  • 1/3 cup palm sugar or other non sugar sweetener (lakanto, maca, yakon, xyltiol)
  • 10 to 15 drops liquid stevia (sunnydew, sweetleaf)
  • 4 Tbsp organic cultured or raw butter
  • 2/3 cup So Delicious coconut milk
  • 1 large organic omega 3 egg
  • 1/3 cup organic blueberries (fresh or frozen)
  • 1/3 cup organic raspberries (fresh or frozen)
  • squeeze of lemon juice
  • 1/2 tsp lemon zest

Yield: 10 scones. Preheat oven to 350 degrees. Mix all ingredients together. Dough will be thick. Drop Large, tall dollops of dough onto an ungreased baking sheet. Bake for 15-17 minutes.
