Quinoa

2 cups organic low sodium chicken broth or homemade

1 cup organic quinoa

1/4 -1/2 cup chopped onion, depending on preference

1/4 cup chopped celery

1/2 cup chopped carrots

2 Tbsp extra virgin coconut oil or napa valley grape seed oil

Ghee or Grass-fed Organic Butter

sea salt, pepper and garlic powder to taste.

*optional- a splash of balsamic vinegar

1. Begin with the quinoa and chicken broth. Follow package instructions.

2. Chop and sauté veggies in oil until soft.

3. Mix veggies with cooked quinoa.

4. Add butter and seasoning.

5. Enjoy!

Ps. You can use water if you don’t have broth, it just adds flavor. Add other veggies like bell peppers, shiitake mushrooms and chopped kale or chard…. For a more asian dish add some Bragg’s Liquid Amino’s (a natural soy sauce)
