Soaked Coconut Granola

  • 8 cups organic gluten free rolled oats
  • 1/2 cup melted raw butter
  • 1/2 cup melted extra virgin coconut oil
  • 1 1/2 cups So Delicious Cultured Coconut Milk or Siggi’s plain yogurt
  • 2 cups water
  • 1/2 cup yakon, palm or lakanto syrup (see recipe at the bottom of page)
  • 10 to 15 drops liquid stevia (I use Sunrider sunneydew or sunnectar or sweatleaf stevia
  • 1 tsp Himalayan or Real sea salt
  • 1 tsp organic ground cinnamon
  • 1 cup organic unsweetened shredded coconut
  • 2 cups chopped nuts (first soaked over night, then dehydrated)

  1. Mix oats, butter, coconut oil, cultured coconut milk or yogurt, and water together in a large bowl. Pat down, cover with a plate or lid, and leave on the kitchen counter for 2 days. (Yes you read correctly)
  2. After 2 days Preheat oven to 200 degrees.
  3. Place your chosen syrup, salt and cinnamon in a small bowl and mix well. You can put it in a small saucepan to warm it up if needed.
  4. Mix syrup with oat mixture.
  5. Place on 2 greased cookie sheets and bake for 2 to 4 hours, until completely dry and crisp. When almost crisp add coconut to toast for the last hour or less.
  6. Mix with chopped nuts and goji berries. Store in an airtight container.
  7. Enjoy!

Syrup Recipe

I just add 2 cups palm sugar, yakon or lakanto to 1 cup water and bring to a boil. Then turn down and let simmer until it begins to thicken (30 minutes or so).  It will thicken a little more once it cools. Add to a glass jar and store in the refrigerator. Sometimes I to 1 cup sugar to 1/2 cup water if I don’t want to make a large batch….
